ORGANIC & LOCAL PRODUCE
Gavé is a celebration of simplicity, subtlety, and delicacy where a single flavor is savored. It is an authentic French experience, with a rich tradition, a savoir-faire.
This is not about a morning croissant or a fancy macaron, but a traditional simple treat that is accessible for everyone.
 
Sourcing
Great taste starts and ends with great produce. We are very fortunate to be surrounded by many local farmers and businesses in our local Surf Coast community who take as much pride in their products as we do. Supporting members of our community by buying local is a core part of the Gavé philosophy.
We follow the seasons and love handpicking our ingredients from local farms and friend´s gardens.

 
Story
 
Gavé is also the story of a French girl who fell in love with an Aussie boy. Pauline, shares her heritage through little traditional treats she would have on her way home from school.

With a French pastry book in the suitcase, it started with the pleasure of sharing a heritage, a story, through
food.
What’s a better way to make new friends than to bring them plates of madeleines or other treats?
It’s also about bringing back simple seasonal treats by using local and organic produce. Handpicking fruits are
a big part of what we love at Gavé. From friend’s gardens to farms, it’s always a pleasure to meet
the people behind our juicy lemons and ripe strawberries.
Sustainability is a critical part of Gavé philosophy. We are conscious of our carbon footprint at each
steps of the production, from cleaning products to our packaging.

Pauline Rotsaert

Co Owner & Baker

Originally from Lyon in France, arrived in Australia less than four years ago. She studied FineArts in Bordeaux where she met Alastair. Baking and cooking alongside her parents was a great partof her childhood. Locally sourced ingredients are a major priority for Pauline as she tries to apply it in Australia.

Alastair Gault

Co Owner

As first-generation Australian, he's always had close ties to Europe. Working in kitchens since the age of 16, food is always at the heart of his adventures. Eating his way around Europe he finally ended up in Bordeaux where he met Pauline where they lived together for four years. On returning to Australia he took on a new challenge and is now an accomplished custom furniture maker, even building our market display.
